This yogurt and lentil dish makes a great snack. The fried lentil vadas are soaked in water to soften them, and then they are covered in a yogurt mixture. There are many varieties - adjust the spices to your preference.

Ingredients

1/2 cup urad dal (black lentil)
1/2 cup moong dal (split mung beans)
1/2 cup water, or as needed
1 cup plain yogurt (dahi)
1/4 tsp. cumin
1/4 tsp. paprika
Vegetable oil for frying vadas

Directions

  1. Wash and soak the dals in water for 4 hours.
  2. Add to food processor and blend at medium speed. Add small amounts of water as needed to maintain a paste-like consistency. Add salt and mix.
  3. Heat oil over medium high heat in a deep frying pan.
  4. Drop tablespoons of batter in the hot oil and fry until golden brown. Remove the vadas, drain excess oil on paper towels, then soak in cool water.
  5. Whisk together the yogurt, milk and spices and set aside.
  6. Squeeze out the water from each vada then arrange in a dish.
  7. Pour yogurt mixture over vadas and serve!
