Eggplant with Rice (Vaangi Baath)

This wonderful curry of sautéed eggplant and onions mixed with rice is a meal in itself.

1 cup rice
2-1/2 cups water
2 medium onions
1 eggplant, about 10-12 ounces
2 tbsp. vegetable oil
Coriander powder, to taste
Chilli powder, to taste
Salt, to taste
Cilantro leaves, chopped fine, for garnish


  1. Prepare the rice by cooking in 2-1/2 cups water until ready. Rice should not be overcooked and too soft. Set aside to cool.
  2. Dice the eggplant and onion into large pieces (to avoid eggplant getting mushy).
  3. Saute the onion in vegetable oil until transparent, about 5 minutes. Add in eggplant and continue sautéing for a few minutes.
  4. Add the spices and continue to sauté for 5 minutes.
  5. Combine the mixture with the rice and mix well.
  6. Serve garnished with a sprinkling of cilantro leaves.
