Spinach with Chickpeas

Ingredients

1 tbsp. ghee
1 onion, diced
2 tbsp. ginger, minced)
4 garlic cloves, minced
2 lb spinach, coarsely chopped)
1 cup chickpeas (soaked - use canned), drained
3 tbsp. water
1 tsp. salt
1 tsp. ground black pepper

Directions

  1. Heat 1 tablespoon ghee over medium in a large skillet. Saute the onion until they soften, about 3 minutes. Lower heat to medium-low and add 1 tablespoon ginger and saute for an additional 2 minutes. Add the minced garlic and saute for about a minute more.
  2. Lower heat to low. Add in the spinach, chick peas, water, salt and pepper. Cover tightly and cook for 2 hours.
  3. Saute remaining ginger in 1 tablespoon ghee over high heat for 1 minute.
  4. Combine remaining ginger with spinach and serve hot.
