Potatoes are boiled, then fried in dry spices until golden brown.

Ingredients

4 medium size potatoes, peeled
2 tsp. cumin seeds
1 tsp. salt
2 tsp. mango powder
1/4 tsp. chili powder
2 tsp. garam masala
Vegetable oil for frying

Directions

  1. Boil potatoes until tender, about 20 minutes. Don't overcook or they will break up when fried. Cool then cut into 1/2 cubes and set aside.
  2. In a large skillet, add enough vegetable oil to cover bottom. Heat over medium high heat and add cumin seeds and fry until brown (less than a minute).
  3. Add potatoes and fry until golden brown and crispy. Add salt, mango powder, hot pepper and garam masala and fry for additional 2 minutes.
  4. Remove to paper towel to drain excess oil.

Well, better get used to the saetrs, and I guess half the population of Qingdao will want to coochy-coo your baby when it comes. Anyway, good luck with it all, I hope it all goes smoothly, and I would recommend getting a maid for a few months after the bir
