Pav Bhaji (Vegetable Curry with Rolls)

Bhaji refers to a vegetable curry and pav refers to small square rolls that are served along with the bhaji. Use whatever vegetables your prefer (carrots, cauliflower, potatoes, carrots, etc.). If you can’t find Pav Bhaji Masala at the market, make your own (search for recipe on this site).

Ingredients

8 pavs
Butter, to shallow fry

For Bhaji:
1 green bell pepper (capsicum), chopped fine
2 onions, chopped fine
2 tomatoes, diced fine
2 1/2 cups chopped mixed vegetables
1/2 cup peas
2 tbsp. butter
2 tsp. pav bhaji masala (spice mix)
1 1/2 tsp. chili powder
1/4 tsp. turmeric powder
1/2 tsp. sugar
Salt to taste
1 cup water (in which vegetables were boiled)
1/2 tsp. grated ginger
1/2 crushed garlic
Juice of 1/2 lemon

For garnish:
1 tbsp. chopped cilantro
1 onion, diced
Lemon sections

Directions

  1. Cook the mixed vegetables with water in a pressure cooker on high setting until done. The cooking time varies with the type of vegetables but no more than 5-10 minutes on high setting (many vegetables take less time)
  2. Drain and set aside 1 cup water. Mash the vegetables.
  3. Melt butter in a skillet over high heat. Use enough butter to coat the bottom of the skillet.
  4. Add the green pepper, onions, tomatoes, ginger and garlic and fry for 5-6 minutes, or until soft.
  5. Mix in the pav bhaji masala, chili powder, turmeric, salt, and sugar and fry 2-3 more minutes.
  6. Add water then bring to a boil. Reduce heat and simmer until vegetable mix thickens.
  7. Stir in lemon juice.
  8. Slice open the pav and roast on a griddle, then lightly butter.
  9. Garnish bhaji with chopped cilantro, diced onion and butter and serve with pav.
