Various recipes use different amounts of poha (flattened rice, available at Indian grocery stores). Add more, per your own preference.

Ingredients

1 cup poha
1 1/2 tbsp. oil
1/2 tsp. cumin seeds
1/2 tsp. mustard seeds
1 small potato, chopped
2 onions, diced
5-6 small green chilies
1 stalk curry leaves, chopped
1/4 cup crushed groundnuts (peanuts)
1/4 cup grated coconut
1/4 cup coriander leaves
1/4 tsp sugar
Salt to taste
1 tsp. lime juice

Directions

  1. Wash poha gently in water, then drain and set aside for 15 minutes.
  2. Heat oil in a heavy sauce pan over medium-high heat.
  3. Add cumin seeds, mustard seeds, and chopped potato. Fry for 2-3 minutes until seeds begin to pop.
  4. Add onion, chilies and curry leaves. Fry until onions soften, about 5-6 minutes more.
  5. Reduce heat to low and remove from heat. Break up the poha and add to sauce pan. Add remaining ingredients and mix.
  6. Add salt and lime juice, to taste.
  7. Return to heat (low) and cook until mixture is evenly heated, stirring occasionally.
  8. Serve hot, garnished with coconut and coriander leaves.
