Ingredients

1 1/2 cups wheat flour
1/2 cups gram flour (chickpea flour)
1 1/2 tsp chili powder
1 tbsp oil
Salt to taste
1/2 turmeric powder
2-3 pinches asafetida
1/2 tsp. cumin seeds
1/2 tsp. oregano seeds
1/2 tsp. ground coriander
1 tbsp water

Directions

  1. Mix together ingredients (except water) and cover with a damp cloth and set aside for 5 hours.
  2. Knead the dough and then pull off a plum-sized section.
  3. Roll out dough into a dough circle about 1/8 inch thick.
  4. Place dough on a pre-heated dry, flat skillet. Cook until lightly brown on one side. Just before flipping, sprinkle water on the top.
  5. Remove roti from skillet and hold over gas flame using tong until surface browns and bubbles slightly. Be careful not to burn.
  6. Serve with butter or preserves.
