Spicy dish of peas with cheese (paneer) is garnished with coriander leaves and typically served with naan. Some variations omit the onions and include a teaspoon of sugar to to make it a sweet and spicy dish.

Ingredients

2 tomatoes, chopped
1 inch section ginger
2 onions, chopped coarsely
4 cloves garlic
8 ounces paneer (substitute ricotta cheese)
3 tbsp. vegetable oil
1/4 tsp. turmeric
Salt and pepper, to taste
1 tsp. garam masala
1/2 lb. frozen peas
1 cup water
1 tbsp. corn starch
Coriander leaves, for garnish

Directions

  1. Combine the tomato, ginger, garlic and onion in a blender to puree, then set aside.
  2. Cut paneer into 1" cubes and fry over medium-high heat in a shallow skillet with 1 tablespoon of oil. Paneer should be a light golden color on both sides when ready. Remove to paper towels.
  3. In a saucepan, heat 2 tablespoons of oil, over medium-high heat. Add the tomato and onion puree, garam masala, turmeric, salt and pepper.
  4. Cover and cook for 3 minutes, or until the puree is reduced by half.
  5. Add peas and paneer and mix well.
  6. Add about 1/2 cup water (or more as required, to desired consistency) and continue cooking for 5 minutes.
  7. Thicken the mixture by adding cornstarch dissolved in 1/2 cup water. Mix well and continue cooking for 5 minutes, or until peas are tender.
  8. Serve warm garnished with coriander leaves accompanied with your favorite bread or rice (or both!)
