Cauliflower and Potatoes (Aloo Gobi)

This is a great recipe because it mostly uses ingredients you likely already have. It works well as a vegetarian main dish or as a side dish.

Ingredients

1 onion, chopped
1 tomato, diced
1 clove garlic, minced
1 inch piece ginger, grated
Pinch turmeric
Salt and pepper, to taste
Garam Masala, to taste
1 medium cauliflower
2 medium potatoes

Directions

  1. Heat onions, garlic, ginger, tomatoes and spices in a medium skillet over medium and fry until onions soften (about 5 minutes).
  2. Break the cauliflower in flowerettes and cut the potatoes into
  3. cubes (8 pieces each).
  4. Add potatoes and flowerettes to masala and lower heat to simmer.
  5. Cover the pot until the cauliflower and potatoes are cooked through.
