Spicy Khaja (Crisps)

These fried dough crisps have some heat from the chili powder. In case you can’t find omam seeds, look for alternate names such as “ajwain”, "bishop’s weed” or “carom”.

Ingredients

2 cups gram flour (chickpea flour)
1/2 cup plain flour
2 tsp. red chili powder
1/2 tsp. omam seeds
1/2 tsp. cumin seeds
1 tbsp. cilantro (fresh coriander), finely chopped
1 tbsp. vegetable oil plus more for deep frying
Salt, to taste

Directions

  1. Combine the chickpea and plain wheat flour then make a well in the center.
  2. Add in the chili powder, the omam and cumin seeds, the cilantro, 1 tablespoon of oil and salt and mix well.
  3. Add a small amount of water and knead, adding a little bit at a time until dough is soft and pliable.
  4. Make about 2 dozen small dough balls, then roll out each dough ball into thin circles (about a 1/4 inch thick, about 4 inches across).
  5. Make tiny holes in both sides of each dough circle using the tines of a fork, then set aside for 25 minutes.
  6. In a large skillet, heat vegetable oil over medium heat.
  7. Shallow fry the khajas until golden brown then drain on paper towels to remove excess oil.
